These homemade waffles are delicious, healthy and great for Breakfast, Lunch, Brunch and/or Dinner. Whip up a batch and freeze a few for a quick on-the-go Breakfast! This is our favourite recipe mix. We eat it freshly made and then the remainder goes into the freezer and we pop that into the toaster to reheat – fluffy and crispy.
We often will have these for dinner once a week, topped with some MAPLE SYRUP + PEANUT BUTTER and a side of turkey bacon.
You could also have it as dessert, topped with frozen yogurt or ice cream (and of course chocolate sauce!). Or, for a lighter option top the waffles with some fruit and chia seeds = delicious. The possibilities are endless.
Yes, cleaning a waffle maker is a pain BUT with just a few ingredients you too can be enjoying this healthy, homemade treat in no time! It is totally worth it.

*LEFTOVER BATTER can be stored in airtight container in the fridge for about a week.
*MEAL PREP TIPS: We include these waffles in our meal prep. As mentioned above these are great to have any time of the day. Breakfast for dinner – why not?! The mix lasts for up to a few days in the fridge in a sealed container. You could always mix the batch and then cook it the next day fresh, and/or make the waffles ahead on the weekend, have a few of them and put the rest in the freezer (in freezer bags) for the week ahead. Cut up your fruit ahead of time to add to the waffles during the week. Pop in the toaster, top with your favourite ingredients and enjoy!
